Grilled Pacific Oysters

Ingredients

1dozen opened pacific oysters
1Tsp crushed roasted peanut
2Tsp chive and ginger oil (recipe below)
2Tsp green nuoc mam (recipe below)

Method

Place ½ tsp of chive oil on each oyster and cook them over smoking hot BBQ or grill. When the chive oil is starting to sizzle and remove from the BBQ or grill. Place them on a service plate and garnish with green nuoc mam and crushed peanut on each oyster.

Chive Oil

1bunch Chive chopped
1tsp grated ginger
100ml cooking oil

Method

Place the cooking oil in small pot and bring the oil temp to smoking hot meanwhile, place chopped chive and grated ginger in small bowl. Once the oil is hot then pour the oil over the chive and ginger mix. Let it cool down to use.

Green nuoc mam

130gm white sugar
70ml fish sauce
75ml fresh lime juice
1each garlic clove chopped
1Tsp chopped long red chilli
¼ cup picked coriander
¼ cup picked Thai basil
¼ cup picked Vietnamese mint

Method

Combine white sugar and fish sauce in small pot and simmer until the sugar is dissolved. Once it is completely cooled down and add rest of the ingredients into blender. Blend them until it has puree texture. Store it in refrigerator.
